Indian Rice With Tofu

Ingredients:

1 container Pacific Natural Foods Organic Vegetable Broth
1 container Maya Kaimal Classic Korma (spiced yogurt sauce)
1 package Ithaca Soy Firm Tofu
1/2 cup long grain brown rice
1 sweet onion
1 whole bulb of garlic
2 tablespoons organic extra virgin olive oil

All ingredients purchased at Brookton’s Market.

Directions:

Cook brown rice in vegetable broth.
Either thinly slice or dice tofu.
Finely hand chop onion, garlic cloves.
Drizzle olive oil in saucepan on low heat.
Sweat garlic in saucepan for 1-2 minutes.
Sweat onion in saucepan for several minutes, until onion is translucent.
Add Kimora, tofu to saucepan, cover on low heat for 5-10 minutes.

When ready, serve sauce over rice.
